The most popular green tea in Japan is Sencha (engl."steamed tea"). The infusion shows a greenish golden colour and has a tangy, slightly bitter taste. The leaf is long and flat-pressed. Sencha, in contrast to many other green teas, is grown on open fields in full sunlight.
Try it: the taste of Sencha can vary due to differences in water temperatures (65°C - more sweet in taste/ 85°C - dry, tart flavour) and also the quality of the water (e.g. hard or soft).
* Preparation: 1 teaspoon per cup, 60-90°C hot water, 0.5-3min. Steeping time.
