The yellow tea "Huang Da Cha" has a long tradition. For several centuries, only the Chinese emperor and his court had the pleasure of its most precious varieties.
Yellow tea is produced similar to green tea but passes through an additional step in its manufacturing process in which the tea is steamed after being slighthly oxidised. This causes the chlorophyll ( chloro = green) of the tea leaf to disintegrate and the otherwise invisible dye xanthophyll (xanthos = yellow) to become visible. Its aroma reveals traces of chocolate and coffee. Characteristic are the stems, which give the tea its sweet flavour.
* Preparation: 1 teaspoon, 60-80°C hot water, steep ca. 0.5-3 min.
